Sauvignon Vinification: in thermo controlled fermenters with four daily pumping over, 20 days maceration.
Barrell aging: French oak tonneaux (500 liters) for 36 months.
Yeasts: selected yeast (bayanus).
Stabilization: None. Loose filtration prior to bottling
Serving temperature: around 18°c.
