Soil: Sedimentary (Limestone flakes) and red clay
Pruning technique: cordon spur Planting density: 5000 vines /ha
Yield per hectare: 5 t/ha Grape variety: Cabernet Savignon 50% – Merlot 50%
Vinification: fermentation at controlled temperature (30°) for two weeks and frequent pumping over
Aging: Second use French 500 lt oak barrel for 36 months, aging in bottles for at least 6 months
Employed yeasts: selected
Operations designed to stabilization of the product: none, loose filtration prior to bottling
Service: should be tasted at 18°
Serving suggestions: Pair with roast or grilled red meat
Average production: 30.000 da 750 ml.
